Backlogged

~sigh~ The days keep passing by yet I feel like I can't keep up. I have tried a bunch of good recipes, so here's a bunch of photos and links for your viewing pleasure...

A bunch of kale happenned to be in my fridge when I read this post. It didn't take me long to whip up a batch of Celine's kagels (kale bagels)! I used whole wheat flour with ~2T vital wheat gluten for mine, and enjoyed them topped with hummus (in the front) or cheese (in the back) and a thickly sliced heirloom tomato... yum :)




I experimented with adding peaches to my caprese salad! This combination has popped up a few places this summer, so I had to give it a shot. I topped my heriloom tomatoes, local peaches, and fresh mozz with a little balsamic that I reduced with a little honey and a cinnamon stick. This was a nice twist on the traditional salad :)



After my pie failure, I stopped sulking and made a small batch of this Sour Cherry Borscht. This was very unique and I really loved how refreshing it was, especially topped with a bit of greek yogurt! Sour cherries, why isn't your season longer??



I finally got around to trying Ricki's Zucchini Pineapple Muffins (originally Mini Loaves)! I was really intrigued by the use of pureed avocado for some of the fat, and gave up waiting for me to buy some spelt flours-- I used white whole wheat for the light spelt flour and whole wheat for the barley flour. Mine seemed to be a bit dry (probably the change in flours), so I didn't keep them in the pan after 25 min in the oven. They turned out perfectly, and i'm in love! So glad I have more ripe avocado stashed in my freezer :)



Got corn? I did, and whipped up a small batch of Ellie Krieger's Creamy Corn & Veggie Soup. It was enjoyab-ly light, but it didn't knock my socks off. Maybe a bit of work on the seasoning front to give it a little punch?



After seeing some Spicy Roasted Shrimp & Green Beans pop up twice (first by Kalyn and then Esi), I knew this was going into the rotation as soon as I picked up green beans at the farmers market! Even using lime zest instead of lemon, this dish did not disappoint!



Tired yet? I sure am! I got one more for you before I hit the hay... a co-worker had a birthday this week and as her birthday buddy it was my turn to take care of the cake. Her request was a carrot cake, with all the goodies (pineapple, nuts, coconut, raisins). I ended up using Eating Well's recipe for the cake (I reduced the sugar a tad and used egg substitute for 2 of the eggs). This got topped off with some golden raisin cream cheese frosting (using Nufatchel, Smart Balance 50/50 sticks, and 1 1/2c powdered sugar) and some toasted walnuts. She liked it! In fact, it seemed to get rave reviews across the board :) Definitely a keeper!

Phew! You have been bussssy. I am loving both the bagels and the peaches in the caprese salad. I tried that Ellie recipe too and thought it needed a lot more kick (hello hot sauce!)

The name Kagels reminds me of kegels... but they STILL sound really yummy!

You sure have been busy! Everything looks great. I saw the original post for the kagels, and was intimidated due to past homemade bagel failures... maybe I'll give it another go with these bad boys.

I love the idea of adding peaches to caprese! I bet that is an excellent sweet flavor addition.

Actually I like them all, especially that muffins. Sounds very unique using avocado in place of fat.

I think Ellie's recipes all need more seasoning, but then I was talking to this trainer who said that women's #1 problem in dieting is that we over-salt. Apparently that makes us retain water, hence feel heavier. But still, you know?

Your recipes look awesome, and I'm intrigued by the melon tart. Sounds good...

And oh yeah - AllClad isn't all it's cracked up to be (literally). I have a $14 pot from a discount store that I actually prefer to everything.

so much good food stuffed into one post! I love the idea of kagels and will HAVE to check out the recipe. I have been eating a lot of caprese as well...gotta love the fresh and local tomatoes and mozzarella. And carrot cake. Well. We all know how I feel about THAT.

Wow--some seriously delicious dishes you've been having! I'm also intrigued by the kagels and can't wait to try them. And you're absolutely right about the flour switch in the muffins--when you sub regular flour for spelt, you need to reduce the flour by 2 tbsp per cup, or else your baked good will come out too dry. (The spelt-based ones actually sometimes come out too moist!!). Glad you liked them. :)

Wow, you were busy in that kitchen! Everything looks absolutely incredible. Let see... questions/comments...
1) was making those bagels hard? I made bagels once and it took forever! Buying them seemed definitely easier (although I guess they don't sell kale bagels, so maybe that's why you may want to do that...)
2)I'm definitely intrigued about that sour cherry borscht, especially after you mentioned it to me. Need to find me some sour cherries. Love 'em! :D
3) Would you do anything differently for the muffins next time since they were a bit dry or did you like that they were dry?
4) Ellie's recipe definitely lack in the spice dept sometimes. I love her but sometimes her stuff doesn't knock my socks off.
5) I want that carrot cake NOW. lol :D

Wow, you've been super busy!!! I wish we got to talk to you at the HLS; you were sitting almost next to us, but whenever there was time to talk, I didn't see you. At least we're all in Boston and hopefully can meet up soon!!

I think this is one of my favorite posts that you've written! I love the recipe reviews. I clipped and saved a carrot cake recipe from EatingWell, and I'm guessing it's the same one you baked! One of these days, I'll get around to baking it...

Hope your backlog of things to do is clearing up! At least your list didn't get in the way of your kitchen time :-)

Don't feel bad at all; almost all of my posts are backlogged, but it's too much work to bake, photograph, edit and post all in the same day. I do try and have them up within the week, preferably within 2 days or even the next morning if it's short since I blog better on somewhat of a schedule.

That sandwich sounds delicious! I love hummus, I need to eat more of it.

Whoa! Your photos look like they came straight from a gourmet food magazine. Nice job! Add kagels? I've never heard of such a thing but they sound yummy. I hope you are enjoying the rest of your summer.
