Pear Gorgonzola Risotto

The other day I saw a recipe for flatbread with carmelized leeks, pears and blue cheese. The flavor combination was definately one I wanted to try, I just didn't want even half a flatbread for myself since I didn't think it would reheat very well. The ingredients ran around in my head, then one night before I fell asleep I settled on risotto! Turns out the idea is not that unique, but it was delightful nonetheless! Mine differed slightly, so here's what I did...

Pear Gorgonzola Risotto

1T EVOO
1 medium leek, cut (half-moon shaped) and cleaned
1/2c arborio rice
2T white wine (the last of a bottle, I keep the small ones on hand for cooking, optional)
~2c stock, warmed
~1/3c gorgonzola
1 bosc pear, chopped (I left the skin on)

In a medium skillet, heat oil over medium-low heat. Add leeks and cook until nice and softened, but not browned. Add wine if using, stir and let rice absorb the liquid. Add stock, ~1/2c at a time, stir, then wait until liquid absorb. Once the rice is tender and no longer taking up liquid, stir in the gorgonzola and pear, and serve! I turned off the heat and left it on the burner for a little bit to allow the flavors to incorporate a bit more.

  7. Oooh!I need to try making risotto. By the way (I knew you'd be the one who could answer this!)- are lentils supposed to smell HORRIBLE!? Please help me because as mine were cooking I had to open all windows and buy air freshener! EWWW!

  8. I love the pear/gorgonzola/carmelized onion (leek) combo. I like it on salads, I like it on pizza and I'm sure I'd love it in risotto! Some toasted walnuts go well, too.

    I love to make risotto, because there are almost infinate variations.(Plus it's always so creamy and comforting!)

  10. healthy ashley- hmm, i've only made them a handful of times, and i don't seem to recall any bad smells... so that's not too helpful :(

    pumpkin- ooh, toasted walnuts! that would've totally worked here, next time :)

  11. ttfn- Thanks for the info. Mine were sitting in the cabinet (dry) for about 6 months and then I think I soaked them for too long (36 hours), when I don't think they have to be soaked at all. Either way, the smell is rancid, so I'm tossing them!

  19. Hey Shannon! I wanted to answer the questions you posted on my blog the last couple of days.

    1) I'm not following the P90X meal plan exactly, but I am following their advice of incorporating a little more protein in my diet. I realized as I looked over their chart which portions out protein, fruits, veggies, etc. that I was a little lacking when it came to protein and veggies and had an overabundance of fruit and grains, so I'm just trying to balance them out and I'll see where it gets me :o)

    2) There's a little bit of jumping up and down, especially during the warm up because we do jumping jacks a lot. But I'd say that overall it's minimal and you could probably get by with doing it without annoying your neighbors!

  22. i think that sounds very unique! pear and gorgonzola are classic, but i've never thought to put them in risotto. that and the flatbread sound fabulous.
