Root Veggie Salad w/Orange Dressing


I've been meaning to tell you about this salad for some time now. It was delicious, involving some of my favorite autumn foods (apples, beets and carrots). It's even raw! Being new to the beet scene, I have come to love them roasted-- I wasn't sure how they would be raw. Turns out there was nothing to be afraid of :) I will definitely be making this again!

My changes to the recipe for this Root Vegetable Salad w/Cranberries, Pecans and Orange dressing were the following:
-I left out the celery root (didn't have it)
-My ratio of orange juice to oil was a little high (I had a big orange and i'm usually shy on the oil)
-I added in the optional POM arils and toasted pecans.


Here's another trivia question for you... What state leads the United States in SPAM consumption?? Yes, we're talking about the canned meat here, folks!

oh the orange dressing and beets looks amazing!!!!! totally my kinda dish!
i make an orange dressing that i call holiday orange spice. so good anything citrus + beets or other veggies. great job!

my guess is hawaii is the spam capital?

i don't even know what celery root is, wheneer i see it in recipes i just sub normal celery...i'm curious though!

Beautiful salad! I just cooked beets for the first time this week and liked them, surprisingly!

I'm guessing Hawaii for the Spam question. I've never had the stuff but it just sounds gross.

Ooo RAW root veggies?? Very interesting. I was going to say I love root vegetables but I've only ever had them roasted. Your presentation looks beautiful too.

I'm on a raw beet kick and would love to try this! I think the apple would be terrific here (as would celery root, which I just happen to have on hand!).

What a lovely winter salad! The orange dressing sounds like it really ties everything together well. I've never had raw beets before either and will have to try them!

Good stuff! I too only just discovered how fantastic beets are a month or two ago. I like them roasted, raw, and dehydrated into chips.

The answer is definately Hawaii! They even have Spam in their sushi rolls. It is pretty incredible, actually. When I was there with some friends, we definately picked up a few cans and tried working with it.
The salad looks delicious, by the way! I loved beets, but my boyfriend absolutely hates them, so they rarely make an appearance on my plates.
