Giveaway Time!

Well hello there, November.  Not sure how we got here, but I realized the other week that it has been over 4 years since I started this blog--crazy!  To celebrate, I'm giving away The Science of Good Cooking, the newest addition to the Cook's Illustrated family :)



The scientist in me loves learning reading about how things like salad dressings work (emulsifiers!), why russets make the best mashed potatoes (starchy and absorb more water!), what grinding your own beef does for burgers (more tender!) and how to make killer brownies (don't overmix!).

I learned that in a pasta or rice dish that calls for milk you can use evaporated milk, but need to add a bit of water so the noodles cook properly (that last bit I didn't figure out til too late).

I learned that when making cream of broccoli you can make a rue with butter/flour milk to thicken up the soup instead of using heavy cream! Handy, and maybe less cals? -Michelle

I learned that you can make rice just like pasta ... without having to measure ... just boil and drain :-)

Don't crowd the pan! After years of basically steaming, inside of searing meat, I finally figured that one out.

As a fellow scientist...damn that book sounds awesome! I've learned that just about any kind of pasta or grain makes for an awesome risotto-esque meal. :)

This book looks perfect for a foodie nerd like me =). I recently learned how to cook rice properly without using a rice cooker! (might seem basic but I've always had a rice cooker and it just recently broke...)

I learned you can make caramel from a can of condensed milk by cooking it on low in the oven for 8 hrs.

I've learned that good cookware really matters. Don't go cheap on pots and pans and definitely not on knives!

Oh, I have that cookbook on my Christmas list!

I learned (the hard way) last night that the turning table really is helpful for decorating cakes!

I also learned today that paper towels are oven safe. I always cook bacon in the oven, but the grease gets all smokey. I saw on FB that you can put paper towels under the bacon (which is on a cooling rack on a pan) so they will soak up the grease.
