A Runner's Curry

I had seen this in Runner's World awhile back and it went in my very large and ever-growing "to try" pile. Actually, it's not a pile anymore, but that's another story. Anyway, who knew Cat Cora was a runner? That makes her a very kewl cat in my book (haha)!! So tonight I bring you Cat Cora's Curried Lentils w/Butternut Squash. I served it over brown rice, withe some veggies.


I'm in the very beginning stages of curry-tasting, so I'm not really sure I can give it a good review. I'd probably give it a 3.5/5. It was good, but didn't knock my socks off. It smelled stronger than it tasted, if that makes any sense! Anyone else tried this? Please chime in or let me know your fav curry-inspired dish for me to try :)

I like curry..I make curry chicken, curry lentils, curry veggies... And I like to add 1 or 2 tbsp of sugar in it, I don't know, it makes it taste better. ^_^

I adore curries! I just checked her recipe and I can see why it wasn't spicy enough to the taste--needs a greater variety of spices! I love the idea of squash and lentils. I'll give it a try and let you know! :)

I have never made my own curry. I have a friend who is great at cooking them. It sure sounds good, I love butternut squash.

curry confuses me. I can have it one place and love it, and then have it somewhere else and hate it. but lentils? i ALWAYS love lentils.
