Raw Apple Crisp

I keep forgetting to tell you about a rockin' raw dessert I made after I went apple picking... raw apple crisp! I channeled Averie and attempted her recipe without a Vita-mix. Looking back at her pictures, I'm realizing I didn't not use nearly enough agave for the filling--mine wasn't saucy ;) Lip-smacking delicious, I loved this version! A bit healthier than the butter-laden topping that's all too addictive, this is a crust I can feel good about!



Raw Apple Crisp
adapted from Averie
serves 4



1/3c almond meal
2T finely shredded coconut
2 dates, diced
agave nectar
cinnamon, nutmeg, or any other spices you desire
2-4 apples, diced

Add almond meal, coconut and dates in food processor. Add agave until mixture comes together and you can press into a crust (probably 1T or so). After chopping the apples, add agave, cinnamon and other spices, to taste. Press ~1/2 crust recipe into 1 container (I used 4 smaller ones). Top with apples. Divide the rest of the "crust" and crumble on top of the apples. Refrigerate until serving.

As a bonus, I'll leave you with a picture of a random lunch from this week... baby spinach, roasted butternut squash, quinoa, dried cherries, spinach chicken sausage and a dijon vinaigrette. Mmm...

Although I love warm apple crisp, this raw version sounds perfect for a sweet breakfast. Your salad looks delicious as well! The combination of ingredients sounds great.

Glad you enjoyed it and yes, I am an agave junkie. I mean basically I could drink the stuff and always add liberally. You can always just "re-load" after everything is done by squirting some over the top. I have been known to do that if I want some extra ridic sweetness and drink-ability of the agave goin' on LOL

Anyway, glad you made it and had this post been up 24 hrs ago, I would have LOVED to put it in my reader tribute part 2 post. Oh well, next time my dear :)

Yum. I agree with Lauren that I usually light mine warm so it'll melt a little ice cream on top but this looks like a unique twist.

Chou- mine lasted a few days, no prob :) the apples might not have been bright white, but still tasty!

First of all, I have been in love with honey dijon dressing lately. Not sure why. Your salad sounds awesome.

This dessert also looks great! So easy to just throw together. Perfect for a weeknight when I'm craving something sweet and decadent.

Ooh, a raw apple crisp would be perfect for those nights or mornings when you're craving an apple dish but have no time to bake it. Brilliant! This recipe would also be good for anyone following the Specific Carbohydrate Diet--just swap out the agave for honey and you're golden!

Apples, coconut, and almonds... I really don't think you need anything else to make people smile over this.

And while crust can be good sometimes, apples are the star buddy :)

I loved this recipe! I tried it cause I really had no time for baking and my kids surely loved it. I also served ice cream on the top to add a little flavor on it.
