Black Bean Dip

It's been a long week, and work will continue to keep me busy well through next week, so please forgive my few words and lame post title :)


Tortilla Soup w/Guacamole & Flax Chips

Keeping in tune with using things up at home, I used a Tequila Lime Turkey Tenderloin and quite a few cans... that may or may not have made the move from Philly with me ;) (Hey, at least they were put to good use!) These goods went into Kelly's Tortilla Soup (very yummy!) and a random White Chili I probably wouldn't make again, so I didn't photograph it.

Carrot Cake Babies

As a carrot cake lover, I knew I had to try some of Katie's Carrot Cake Macaroons... however I don't have any coconut butter, so mine were made from a finely shredded carrot, unsweetened coconut, almond meal, dates and vanilla extract. I guess they ended up more like Diana's! Love these babies :) Although now I'm realizing I forgot cinnamon, walnuts, and other spices... next time!!


Gruyere Crackers

Hmm, I also made some Gruyere Crackers (made with cave-aged Gruyere instead of Parm, all white whole wheat flour, and Smart Balance sticks for butter) and Black Bean Dip to bring along with me tomorrow... it tastes better than it looks!

Black Bean Dip


Black Bean Dip


1 can black beans, drained (reserving 1T juice) and rinsed
1T reserved canning liquid
1-2T lemon/lime juice
1 clove garlic
1T chopped onion
1t chipotle/adobo sauce
pinch salt
~1/2t cumin
3-4T freshly chopped cilantro
1T olive oil

Combine all ingredients in food processor and blend until smooth! Serve with tortilla chips, veggies, or as a sandwich/wrap spread.

I have to say that the carrot cake action has me wanting carrot cake! The dip looks nice, but I am a cake n balls girl, no doubt LOL :)

wow! girl where do you find the time? and for me this was a week from hell too. did you see the wolf moon last night? I bet the skies were spectacular in boston. I want to try those crackers.

Yum, what a spread, Shannon! I think there was no need for that disclaimer at the start of your post ;-) The Tortilla Soup and Carrot Cake Macaroons sound fabulous.

Your line about the cans making the move with you cracked me up...I'm in the same boat, smacking myself on the head for moving so many cans from Chicago to Texas! Gah! Time to clean out the pantry!

Mmm...loving the black bean dip, it would make a marvelous spread for sandwiches.
But!! That grueyere crackers look PERFECT!!! I've tried making crackers before...those are hard! I'm so impressed!

Those crackers look fantastic. I may have to bug you for the recipe. I'm planning on making your bacon toffee cookies next week for our work bake sale. I've actually been brining my own bacon in anticipation so hopefully it'll do the cookies justice.

You made your own crackers?! WHOA! That is so impressive! They look perfect! And I love those carrot cake babies - just saying the name makes me smile, but looking at your pic makes me hungry! Maybe instead of a cookie swap, we should have a baby swap (HA, I didn't mean it that way). I mean we should all come up with our own version of 'babies' and swap them. It seems like the amount of recipes one can make with the 'babies' is endless. So why not?

I've never had black bean dip and I'm still not a HUGE fan of black beans... maybe I should try this to branch out and experience the goodness of black beans.

I'm a big fan of black bean dip. I like the idea of using chipotle peppers in the dip instead of jalapenos (which I usuall use). Have you ever tried adding some crushed tomatoes to the mix? It's really good.

hey girl! Yes- I always ask for my dressing on the side or they wayyy over do it. Try it again without the dressing - its so delicious!
