Catching Up

*chirp chirp*

Sorry for the unplanned absence!! Two crazy weeks at work, followed by a week of dog sitting (see below) left little time for blogging. I have been eating (don't ever "forget" that one!), cooking a teensy bit... but not really taking pictures.

Perseus

I finally got around to making some pizza dough (I used all white whole wheat flour), only to have my calzone get eaten at work (really, who does that??? Not cool.) So no picture.

I "un-cooked" Ricki's Carrot & Sunflower Seed Pate (with Pumpkin Seeds instead of Sunflower Seeds...  oops!), and made some killer sandwiches on Nutty Whole Wheat Bread (from the Foodbuzz Festival!) with sprouts and cucumbers.

(bad lighting... I know
)

Hmm, what else... oh, there was Kerstin's Sweet Potato Black Bean Hummus! That was delicious, especially paired with a sauteed kale/onions/mushroom mixture in a whole wheat blanket (aka burrito/wrap).

Fresh flowers to brighten the day!

My commute last week gave me time to read a few good books... Mind Gym (I think it applies to athletic endeavors and life!), Thrive (while i may not go vegan, there are principles and ingredients that I will try to incorporate to my diet), and The End of Overeating (eye-opening, and reaffirms why I'd rather make my own food!). Gotta love the library!

Is it spring yet?

I've been doing a little more cooking and playing with my camera after a visit with Gary Tardiff. Kerstin had a great recap here (thanks for organizing!). White balance, ISO, shutter speed, aperture... steep learning curve here :) We'll have to see how well I can incorporate his tips!

How are you all doing?? :)

I'm so jealous that you can read while commuting. I have a short commute but I'd love to have built in reading time every day :)

I am going to have to try that black bean and sweet potato hummus, I love that combination!

Looks like you cooked up some great meals, and got to hang out with an adorable dog! That sucks about your calzone..we've had some of that happen in our office, some people want to put a nanny cam in the fridge!

Perseus is such a cute dog, so nice to have friend that can do dog sitting. You are certainly a good friend Shannon.

You've made Kerstin dip? I am sure it was delish. I saw the post, and also tempted to make it myself.
Cheers,

Glad you posted about the books here. I can easily reference this. Your calzone was eaten at work?!!! I would definitely kill someone for that.
Glad we got to see each other yesterday. Hopefully we can make it more of a regular thing. :D

Hey lady, I have so missed you! I understand though...work can get crazy. I wish I had a commute so that I could read! I love reading but it gets pushed to the wayside what with all the homework I have...

That pate sounds awesome and I've wanted to make Kerstin's recipe for FOREVER. Thanks for reminding me! I can't believe someone ate your calzone...WTF?

WELCOME BACK!!! I have missed your posts! I can't believe someone ate your calzone at work! That is so unbelievably RUDE! I mean they obviously know they didn't bring it!

Glad to see you online! That pate sounds awesome! I used to read when commuting on the metro to DC when I worked there and get so much reading done; but I do get to read my books while my daughter is at dance or music :)

I can't believe someone ate your calzone! Shame on them. The dog is adorable and your eats look good - especially the pate.

Hi Shannon, great to see you again :) Glad youre back and life just happens sometimes!

Thrive. Love it. I mean, I am vegan and I dont take it at 100% face value but i enjoy the thoughts, principles and general info he has. I am glad it's resonating at some level with you!

Your pictures look awesome! That dog is adorable, he's a perfectly good reason to take a blogging break :) I can't believe someone ate your lunch!!! Really! Who does that!?!?

Glad you're back :)

I'm having a hard time getting past the fact that someone ate your calzone - that's so horrible, what's wrong with people?!

Glad you enjoyed the hummus! I love your idea to use it in a wrap with veggies and will definitely be trying that next time! Thanks for the link love :)

She's alive! Glad to see you back. :D

That's one thing I miss on my train ride to Chicago - it was an hour each way - tons of books were read!

It's been almost 10 years since I worked downtown, and I think I've read a total of 10 books in 10 years - so sad!

Happy Friday Chica! (and thanks for your cheerleading!)

EEW! Someone actually ate your lunch?! That's insane! However, it's definitely not uncommon. There was a lunch stealer in my office some time ago and we set-up a webcam to catch him. Muaahhahahahaha!

Perseus looks like such a sweet dog. You sound like you're enjoying your time with him.

That 'uncooked' pate looks amazing! Raw foods really do intrigue me...

Welcome home, Shannon! I'm glad you're back and that everything is okay.

I'm so sorry about your calzone! One time someone at work ate my soup and I was fuming mad.

Your flower pictures are beautiful.

You've been doing some good reading! I'm really interested in reading Thrive after reading through the e-lessons you can subscribe to. I may not be a tri-athlete, but a ton of what Brendan writes is applicable across the board. Plus I like his approachable style.

Sorry your calzone got eaten! I would officially flip a sh*t if that happened to me. Luckily my office is too small for that to happen without witnesses. ;)
