Amazing Pancakes

I've been meaning to tell you about these pancakes... but with puppy sitting, my parents visiting, and some more dog sitting, I haven't had much blogging time. Didn't mean to hold out on you ;) And of course I have some more doggie photos for good measure!

So the recipe (found here) is for Kabocha Buckwheat pancakes. I don't know if it was the buckwheat flour, the spices (cardamom), or the combination of the two that put these over the top, but I was floored!!


While I didn't have buckwheat flour on hand, I did have some kasha (roasted buckwheat), which ground to a flour easily in my spice grinder (aka coffee grinder). I also used some kabocha I had already roasted (instead of grated fresh squash). I'm sure any other winter squash or sweet potato would work as well.


I can't wait to try more recipes using buckwheat flour... have you used it before? Or do you have any recommendations??

I've never tried buckwheat flour but now I'm intrigued - your pancakes sound fabulous! And yay for more puppy pictures :)

i have only eaten things w/ BW flour in them never cooked w/ it myself but it's GF and i really should...great job on the pancakes!

I bet that kasha is equally delightful. I love using buckwheat, should experiment with your ground kasha.

Mmm, cardamom! I love that spice. And it's so beautiful in pod form that I like to stop by my spice rack and just admire the jar. Now I need to follow your lead and try it in pancakes--sort of like India meets America in breakfast form?

That sure is a pretty looking plate of pancakes!! I've never used buckwheat flour (or kasha) before- I will have to pick some up to play with! Cute puppers pictures!!!

I have buckwheat flour... bought it awhile back for pancakes :) I've never had kabocha before though. I need to get my hands on this deliciousness asap.

wow, wow, wow, those look delicious! i can never find kabocha anywhere, but i always have sweet potatoes on hand, so maybe i could use those :)

I've never had REAL buckwheat cakes, but I've heard that they're totally worth it :) And those spices sound amazing in the pancakes!

Oh those look amazing! Every time I've tried using buckwheat flour previously, I was very disappointed with the results, but perhaps I should try grinding my own- It seems like that makes a big difference!

That is such a beautiful stack o' pancakes! I love the color! Buckwheat flour sounds very interesting. And if it can make pancakes look like as good as that, I'm game! The puppy pics are the cutest :)
