I've probably mentioned it before, but I hated brussels sprouts as a kid. Whenever my mom made them, they had to be at the other end of the table :) I don't mind them now, but didn't fall in love until the Foodbuzz Festival. After this I knew I needed to try again, and they would find a way to my heart.
When I saw Tara's Sweet Potato Gnocchi w/Brussels Sprouts and Walnuts, I couldn't wait to get into my kitchen :) I took a slightly different approach, as I had some Sweet Potato Papparadelle in my pantry. It was a great pairing, and I'd use this preparation for sprouts as a topping for a baked sweet potato too!!
Sweet Potato Pasta w/Shaved Brussels Sprouts
adapted from Seven Spoons
Serves 2
6oz sweet potato papparadelle
10oz brussles sprouts, trimmed, lightly steamed, thinly sliced
1 1/2T olive oil
1T butter
2-4T chopped toasted walnuts
freshly grated parmesan
Bring a large pot of water to a boil.
Meanwhile, heat oil and butter in medium nonstick skillet. Once butter is melted and beginning to brown, add thinly sliced brussels sprouts. Saute until browned and caramelized.
Add salt to pasta water and cook pasta until al dente. Drain and transfer to skillet with brussels sprouts. Add a little pasta water if needed to coat pasta if it's a little dry.
Transfer pasta to plates, top with chopped walnuts and parmesan right before serving.

Sounds like a great pairing to me too! I have a dish that combines brussels sprouts and butternut squash, so it reminds me a bit of that too.
The sweet potato papparadelle sounds excellent in combination with brussels sprouts and walnuts! An excellent pasta dish!

I LOVE roasted brussels sprouts! I haven't tried sweet potatos but they are on my list of foods to try in the near future.

I love both brussels and sweet potatoes! This is a great pasta dish...those sweet potato pappardelle are the best aren't they? I wish they sold them in NYC so I wouldn't have to buy them online.
I think it's all about how you cook brussels sprouts. I love them roasted. Infact, I actually crave them sometimes. Same with sweet potatoes. Looks like an amazing dish :)

YUM!!! I never had brussel sprouts as a kid (My mum hates them so she never fed them to me), but I have since tried them and am ADDICTED!!! Love me some 'mini cabbages' :)
I don't think I've ever had sweet potato pasta. But then again, sweet potato paired with anything is a winner in my eyes, especially brussels sprouts. I like the flavor of brussels sprouts, but I know some find it a little funky. I think the sweetness from the sweet potato papparadelle would really make anyone a brussels fan! Great flavor combo!c

Shredding the brussels sprouts really seems to change the flavor a bit (not that they aren't delicious anyway!)--I bet they would pair beautifully w/ the sweet potato pasta. Sounds great. :)

Sweet Potato Parpardelle OMG!! I followed the link, looks like I'd have to order it as they don't sell it anywhere near me. Might just have to though, veggie pastas like that are always exciting. And I love the papardelle shape.
I hated brussel sprouts as a kid too, until I had them roasted. When roasted I could eat a pound in one sitting. Is it still healthy in that quantity?
I never had brussel sprouts as a kid. it's funny how some foods just get a bad name though, you know? I tried them once as an adult, but I think I need to give them another shot because they definitely seem like they COULD be good haha

the first time i tried brussels sprouts was last year. my mom never served them b/c she didn't like the way her mom cooked them growing up (boiled and mushy). i told her about my roasted brussels sprouts discovery and now we both love them!!! (the rest of the family hasn't gotten on board though). your pasta looks delicious!!
