CSA Week 2

Days are flying by here, but here's what Week 2 of my Marshall's Fenway CSA brought me...


After all of the things I made with Week 1's goodies, the one thing that plagued me was the lettuce.  Really?  I don't know why, but it sat in my fridge as I came up with other fun ways to use the rest of my goods.  That was until my partner in crime suggested a avocado BLT, and I was sold.

the BALT:  Bacon Avocado Lettuce and Tomato

A layer of creamy avocado, topped with crispy bacon, and local tomato and red leaf lettuce made for one fantastic sandwich!!

With my leftover Six Grain & Pumpkin Seed bread I decided to run with the sandwich idea and whipped up a recipe that I've been meaning to try for some time now-- Chickpea Salad!  While pegged as a mock tuna salad, I don't think it needs to be associated with tuna at all, so I'm going with its own name :)  Garbanzo's are my favorite kind of bean, so I was quite smitten with this and will make it part of my regular rotation!  My only change to the recipe was to use picked green tomatoes instead of straight up pickles as that's all I had on hand.





Anyone else have any more creative uses for fresh, local lettuce?

Aww you're gonna rock your race! I've been mixing lettuce into grain salads to use it up. Just made a salad with wheatberries, mozzarella cubes, zucchini, roasted red peppers and a balsamic vinaigrette and threw some butter lettuce in. So good!

Mmm, the only thing better than a BLT is an avocado BLT! I so wish I joined a CSA this year! Good luck at your race :)

What beautiful produce! This was the first week of my CSA and like you, I was at a loss for what to do with the lettuce. I ended up making chicken lettuce wraps - yum!

I SO want to join our CSA. Fun sandwich. I love avocado...mmm. What about a grilled salad? I used to get a grilled romaine salad at a restaurant in hilton head and it was amazing! They only throw the lettuce on the grill for a short bit- but it makes for such a fun dish!

Hope your race went well! I'm craving a BALT now! How about roasted or grilled veggies served over the lettuce with a dressing of some sort.

I love faux tuna salad! Yum yum yum. Also, avocado BLT? Now that is a good idea.

If you are at your wit's end with the lettuce, just make a green smoothie with it. It would be such a shame to not use it! Lettuce works just as well as spinach in the banana green smoothies. Throw in a little cocoa powder for extra antioxidants ;-)

they always give so much lettuce for CSA summer packages. But smoothies and wraps are a good way to use them. Or use for compost. Well, that wasting it, but kinda in a good way. haha.

Avocado sounds like it would elevate BLTs to a whole new level - what an awesome idea! I like Erica's idea for a grilled salad too!
