Farro has quickly become my favorite whole grain. No doubt it was only a matter of time before I threw it into a risotto. Paired with butternut squash and sage (a few more of my favorite things), this dish should be on your menu next week!
Butternut Farrotto

Serves 2-4
2c 1/2" peeled butternut squash cubes
2-3T extra virgin olive oil, divided
1/2c chopped onion
1 clove garlic, minced/pressed
2T chopped sage, divided
3/4c farro
1 1/4c broth (or more water)
1 1/2c water
1-2oz gruyere, finely grated
Preheat oven to 400deg.
Toss butternut squash cubes with 1-2T olive oil, some coarse sea salt and a few grinds of black pepper. Spread out on a baking sheet and roast in preheated oven until tender, ~20-30min, stirring after 15min.
While squash is roasting, begin cooking the farro. Heat 1T olive oil in a medium pot over medium heat. Add onion and cook until softened but not brown, 5-8min. Add garlic and 1T sage and cook until fragrant, 1-2min. Add farro, stir to coat and toast the grains for a few minutes.
Add broth and water, stir and bring to a simmer. Reduce heat to low and continue to simmer, stirring often, until the farro is tender, 20-25min. Once the farro is tender, stir in roasted squash, remaining sage and grated gruyere. Taste and adjust seasonings, then serve topped with crispy sage if desired.

Looks good to me. I decided to incorporate farro into my diet, but was surprised at how expensive the grain can be. Have you found a reasonable price on it in town?
@Molly- Yes, it can be expensive, but I have managed to find it to be cheaper from bulk bins. Can't recall if I've checked at WF yet, but when I made the trip to Wegmans I found it out there :)
i've never eaten farro or cooked with it---but i think i need to change that! i'll look for it next time i'm at whole foods!
I wanna try farrotto! I've actually only had farro a few of times but liked it. Haven't made it myself at home yet, but I'll remember this post when I attempt it!

YES!! I've been meaning to make a farro risotto for a while now, and I can't think of a better add-in than butternut squash. This WILL be made, and soon =).

I've actually never had farro because I usually stick with its less expensive cousins, wheatberries. I should check and see if whole Foods carries it!

Wow and YUM!! I love all the cool grains that you can make "risotto" with and farro sounds like a perfect match. Giada de Laurentis has made me really want to get on the farro bandwagon - I am SO trying this soon!
Oh yum! I made a farro risotto last year and absolutely LOVED it! I actually think I said I'd never make another arborio risotto again... But then I totally forgot. Now I'm definitely motivated to try it with farro again. And I love butternut squash in anything!! :)

Farro is one of my favorite grains. Although the one I get most often is pearled, so I guess its not whole. I haven't tried using it for risotto yet - your looks delicious!
I've never tried farro! I'm going to have to change that. I have lots of winter squash around that need using, too.
