Chilled Watermelon Soup

Last week we saw some pretty hot temperatures up here in the Northeast.  How convenient, then, that I was creating a chilled soup for the 5 Star Foodie Makeover Challenge this month!


I thought I'd play on one of my favorite summer salads and created this chilled watermelon soup.  Unfortunately I had forgotten about the feta I picked up for the soup when I took the pictures, so you'll have imagine some of that in the bowl ;)  It definitely adds a nice dimension to the soup, so I wouldn't leave it out!

Chilled Watermelon Soup
Recipe by Shannon
Serves 1-2

For the soup:
1 1/2c cubed watermelon
1/4c grape tomatoes
1-2 basil leaves (a few mint leaves would also work well)
dash of salt

For serving:
cherry tomatoes, halved
crumbled feta
hot sauce/chili oil, if desired

Add soup ingredients to a blender and process until smooth.  Strain and chill for a few hours.

To serve, place some tomatoes and feta in a bowl and top with chilled soup.  Top with some hot sauce or chili oil to give it a little kick, if you're into that sort of thing ;)

Oh, I'm all about cold soups when it gets ridiculously hot outside! This sounds so refreshing =).

Mmm, I love cold soups. I'd love to make white gazpacho, one of my favorite cold soups.

Oooh I've never had chilled watermelon soup, sounds interesting! My favorite way to cool off is definitely ice cream or fro yo :)

This reminds me of the watermelon-basil cooler (drink) I posted a while back except of course mine had no tomato--I would never have thought to make this combination of ingredients into a savory soup! Sounds great and uber refreshing. I'll have to try it this way! :)

WHo needs little white bits floating in a soup this beautiful! It looks simply perfect the way it is. Chili oil is a great addition. As the temperature is rising, this is a perfect way to lighten up deliciously.

I'd imagine a cold tomato gazpacho with watermelon cubes would be more commonly served in the summer heat, but I just love the way you turned it the other way round here. Way more refreshing!

Hmm, an interesting flavor combination! I'd probably go for this in salad form over soup form, but either way, it sounds very refreshing, like a nice way to start a summer lunch or dinner.
