Teff Porridge

At some point in the not-so-recent past, I picked up some teff from some natural grocery store, thinking either of its health benefits or of the tasty injera I had tried at an Ethiopian restaurant.  After a failed attempt at injera, this tiny grain sat around in my cupboard for years (yes, years).

At last its time had come, and lucky for me this recipe turned out much better than the one I had tried for injera.  I didn't expect a whole lot, but it was absolutely delicious and a great change from oats!  Two batches and I am out of teff, but I'm guessing I won't be for long ;)




Teff Porridge
adapted from Serious Eats
Serves 2

3c water
1/2t kosher salt
1c whole grain teff
1/2t ground cinnamon
1/2t ground cardamom
1T unsalted butter
3T maple syrup

Bring water and salt to a boil over medium heat.  Pour in the remaining ingredients and stir well (you'll feel the teff trying to stick to the bottom of the pan).

Turn down the heat to meidum low and let the porridge simmer until it has thickened, stirring occasionally, ~10min.

Cook until the porridge has thickened and teff is tender without being mushy.  Remove from heat and top as desired.

I don't think I've ever had teff. I like all the flavors you've paired it with here.

I too have had teff sitting around in my pantry for much longer than I'd like to admit. I wanted the flour, but somehow ended up with the whole grain instead. I would be so happy to turn it into something not only edible, but as delicious as this porridge seems!

ha i've considered trying to make injera at home before but now you have me second guessing myself ;) although i guess if i screw up i could always make this!

I've never done anything with teff but this sounds like such a great way to start the day! I've heard injera is tough to make, so this is a great alternative to use all that up!

teff is the "new" old grain. yes? I've heard great things of the flour. We love it a porridge. SO TASTY.

I've never had teff...not even sure if I've heard of it, although teff flour sort of rings a bell. Time to give it a try!

Go whole grains! I've never tried teff before. Do they have it at Whole Foods? I need to try it!
