The fishies were eager to say hi! Or was that I'm hungry after hibernating all winter? I'm not sure ;)
I wanted to share with you the dessert I made for Easter-- a Meyer Lemon Lavender Bundt Cake. I followed Hannah's recipe for the cake, adding in 1T crushed lavender pedals (you could probably use up to 2T, but I ran out). I made a quick glaze of sifted powdered sugar and more meyer lemon juice/zest (3.5T for 2c sugar). While the glaze came out a little runnier than I had wanted, it was absolutely delicious. Everyone seemed to enjoy it, and I couldn't help but go back for a second piece!

This was the first time several of the people at our table had tried meyer lemons, but they enjoyed the slightly more complex and less tart flavor. Have you tried them? What is your favorite thing to do with them?

I am obsessed with Meyer lemons as you probably know. Hard to pinpoint one thing I like the most..maybe curd? Love the sound of this cake!

The cake looks just perfect! I would have gone back for seconds too :) I love fruit or fruit flavored desserts... I'm just not much for chocolate!

I have to admit I've never made anything with meyer lemons, but after my experience with orange confit (which I made a week ago and am posting about shortly) I'd probably do something similar but with the lemons.

when i was pregnant we lived in a house in san diego from the 1920s, complete with huge lemon tree and a small meyer lemon tree. At any given time for 6 mos a year, i kid you not when i say the tree had 50-100 lemons on it at all times!
I am delighted to be one of those at the Easter table tasting the "DEELIGHTFUL meyer lemon cake. It was great and even got a piece to bring home. The food, the company and the serenity of the fish pond made for a perfect Sunday afternoon.

What a beautiful koi pond! Where was this? It looks so exotic, yet tranquil and serene. I've never had/tried a meyer lemon. But, I remember a friend telling me she made string beans for Thanksgiving with a meyer lemon sauce. She said it made all the difference in the world. Now after seeing your bundt cake, I'm dying to try them. Your cake looked so perfect!
