But first, a recipe idea! This was my take on Deb's eggplant salad toasts. To the roasted eggplant and red wine vinaigrette, I added some chickpeas and farro and topped it with the feta and scallions. Loved the salty bite of feta with the chewy farro and creamy chickpeas and eggplant!! This would certainly be adaptable to a variety of grain-vegetable combinations, too, so go wild :) If you're interested, I recall making the amount of eggplant called for in her recipe, cooking up 1/2c farro, and adding 3/4-1c chickpeas to make two servings.

I could never tire of feta. Ever. My favorite flavor pairing...right now it's feta in lemony dishes...like my zucchini crudo or PW's Baked Lemon Pasta. It adds extra tang, I think. And apparently I really like tang.

Mmm, eggplant with chickpeas and feta sounds so yummy. I think an easier question would be what don't you like feta with, haha. If I had to pick one I'd go with red peppers.

I love feta paired with hummus, red peppers, and warm pita triangles...I discovered this at Tavern on Broad in Philadelpia and have reinvented it at my house for yummy appetizers when entertaining..dipping the pita with hummus and adding some feta on top makes a sweet savory taste!

One of my favorite feta items is this dip I get at a restaurant on Martha's VIneyard...its a whipped Feta Rouille and as soon as I figure out that pairing I'll let you know ;)

Ooh, I would love that little salad guy! How could one not love feta... I have the hubs sitting next to me so I had to ask for a little help in picking a favorite. We're going with black bean and feta tacos. Not a completely intuitive combination, but I swear... it's delish!
