Turkey Tuesday II

Sometimes I look forward to the obligatory turkey sandwich after thanksgiving more so than the big meal ;)  In anticipation of some leftovers from the upcoming holiday, I tried out a few recipes that would put that turkey to good use!  In case you missed the first post, feel free to check out my Curried Turkey Salad.


This quiche could serve as a quick portable breakfast or even a light lunch/dinner alongside a green salad!   Not a dense quiche, the lighter texture might be appreciated in the days after the big feast ;)


Crustless Turkey and Spinach Quiche
adapted from Cooking Light via Culinary in the Desert
Serves 4-6

~1T extra virgin olive oil
1/2c chopped onion
1c cooked/leftover turkey
~3oz cheddar cheese, divided
1-2c spinach, chopped
2 eggs
2 egg whites
1c cottage cheese
1/2c milk (whatever you have on hand)
1/2c white whole wheat flour (or AP flour)
1t baking powder
1/8t salt
few grinds of black pepper

Heat olive oil in a small skillet over medium heat.  Add onions and cook until tender and just about browned.  Remove from heat and set aside.

Preheat oven to 350deg.

Spray a pie plate with nonstick spray.  Grate ~1oz cheese over the bottom of the pie plate.  Scatter over turkey, then follow with the cooked onions, spinach and remaining ~2oz cheese (grated).  Whisk together remaining ingredients (eggs through pepper) and pour over turkey/spinach/cheese layers.  Bake in preheated oven for 40-50min, until a knife inserted into the center comes clean.

Cool on a wire rack, then cut and serve!

What a great idea for leftover turkey! I bet it would work with leftover ham after xmas too!

Yum. For some reason quiche makes me think of pork and not turkey, but this adaption sounds fantastic.

Would you believe I've never made a quiche? Too true unfortunately. This sounds like a great way to use up extra turkey. good stuff,.

Funny, the only kind of quiche I've made is a vegan quiche... I should definitely try making REAL quiche one of these days!

I like the idea of a crustless quiche! I love quiche, but the uber-buttery crust (although tasty) seems to cancel out the healthy ingredients in the egg layer. I don't want to wait until after Thanksgiving to make this :).

I look forward to leftover bread and gravy! The turkey is an afterthought. My mom makes homemade bread and my dad makes the gravy from scratch.

A quiche is a great leftover idea!

That looks delightful! My mom makes a similar Crustless Quiche. I love that you added turkey to this one though. I'll keep it in mind for Thanksgiving leftovers.

Ooh, I like the sound of this recipe! Don't be offended, but I'd skip the turkey, and I think it would still be really awesome with all those cheeses and vegetables. Yum!

(About the turkey--it's delicious but not vegetarian...)
