It's a Wrap. Now Beet It.

When my aunt came to visit, she cleaned out her fridge... and brought it to our house! One of the gems included were roasted beets. Wanting to use the mixed sprouts I had picked up from the farmers market (umm, wow!! they had all sorts of sprouts as well. very neat), I came up with lunch...

A Joseph's whole wheat and oat bran wrap that I picked up at Hannaford the other day (first heard about here), and a schmear of goat cheese rounded out the concoction. I'm not too good with making my wraps, ummm, "wrappable" :) Always overstuffed!! But here's a [fuzzy] look inside:


Ok, today will be the day I work on my paper. I hope...

Confession- I hate goat cheese. Last time that I tried it, it acutally made me shudder. Do they all taste similar or are there differences based on brand? Everyone love it and I am thinking that I just had a bad experience... I feel like I am missing out on something amazing.

Melissa- oh no!! that's not good :) i've only had soft goat cheeses, and they're all pretty similar in taste (or at least what I've come across)... a nice tang as some people describe it. I do know others who aren't as smitten as I am!

Danielle- hope yours is going better than mine!!

Esi- I hated beets growing up but tried them a year ago when my mom had them and really enjoyed them. I think I always pair them with goat cheese, too, it just works so well! Except the time I pureed them and put them in a chocolate cake :) hehe

that looks so delicious. I have a can of beets in my cupboard- dont know if it would turn out the same, but its worth a shot. if anything else, i can dye my hands a nice purple color.

Nice lunch of champions. I don't know what kind of person cleans out there fridge and gives away something as great as beets, but I wish I knew someone like that :)

my aunt was going to be out of town, so that's why she was brining us goodes... but she is awesome!!

adam- my paper was based on my PhD research... about a protein that can disrupt normal growth when expressed in certain cell types
