Unexpected

I was thrilled when I heard the forecast for the weekend, since it meant a run outside! I can deal with the 37mph wind gusts when it's 48degrees in Boston. In February :) (Talk about unexpected!) The most annoying part was stopping all the time to walk around the huge lakes--err, puddles-- from the melting snow. Not that I'm complaining, it really was a fabulous day!

For last weekend's fun, I set out to make some Red Lentil & Sweet Potato Hummus, using this recipe. Sounds good, right? Well... I ended up with soup. If I hadn't been doing 5 things at once (ok, maybe only 3), I probably could've salvaged a hummus-like consistency. It took me 3 times of re-reading the recipe to realize that I used 1/3 the amount of lentils. Oops! That extra cup of lentils probably would've done a good job of absorbing all that liquid! Anyways, my unexpected soup was actually quite tasty, and I had it with some leftover Caramelized Fennel Flatbread, crisped up in the toaster oven. Fabulous!!



I also used some really ripe naners to make some Banana Biscotti, I hope they are enjoyed :)

I'm getting shivers just thinking about running in temps that cold! I am glad it was a "warm" one for you though! It must be nice to get outside after so much freezing weather.

Your hummus...soup...whatever looks so good. I bet it was a big hit...and that biscotti? I don't even need to taste it to know it's delish - it looks that good!

I am totally with you on the wind + warm weather. I can take 100mph gusts if it's warm! Well, that may be a slight exaggeration ;o)

Mm...I'm just catching up on everything Tri to Cook and that fennel flatbread looks AH-mazing!

I want some biscotti! I have never tried making it before and I know I'd love it with coffee. Fo sho!! I love that we have this little inside joke now ;o) Fo sho. Haha, too much?

ahh i'm so jealous of your weather, it is beyond horrible in london - wet, grey, cold, it couldn't be worse :( your pictures cheer me up though - the biscotti especially!!

Glad you were able to run outside. It's pouring here today and have plans to workout in the garage, thank God.

I roasted the brussel sprouts w/o.oil and they were ok. Bet they'd be good with a little soy sauce though. My family rejected without even one bite!!

How wonderful! Banana biscotti! Now that's flavor. Some biscotti is so under-flavored you know? I bet this is not.

OMG!! I am the PROUD receiver of these biscotti-
DELISH!! I died and went to heaven eating these babies!! I had one on its own to savor the flavor, and just recently I crumbled one small one on top of some plain FF greek yogurt. Perfecttion, these are seriously amazing!

Full of flavor, perfect crunch, and the just perfect amount of chocolate drizzle to accentuate the spice :)
