A trip to Spain, no France... oops!

Ever since trying my first Tortilla Espanola at Tapeo, I've wanted to make this at home. I had picked up some chicken/turkey andouille, which I kept thinking was chorizo, so I had this dish in mind. When I went to make it and realized my mistake, I went ahead anyways. It should work, right? Slightly different seasonings, but still delicious! I used a nonstick pan, so got away with a bit less oil, and also snuck in some egg substitute for some of the eggs.


This was awesome for breakfast, lunch, and dinner, and reheated very well! If you ever make it to Tapeo, they had some pretty tasty sangria!! Went down nice and easy ;-)

I actually often substitute andoille and chorizo for one another in recipes. Both of those are great. Your recipe sounds fantastic!

mmmm. that looks so good! i love sausage of any kind!! andoille is one of my favorites, although i like chorizo, too!

Erica- aww, thanks! Alot of the time I get inspired by ingredients (I love to roam grocery stores and shops for different/new ingredients). This time it was the dish I had at a restaurant that stuck in my mind, and often it is from the one of the many many food blogs I read :)

Sangria is my weakness in life, along with champagne. I would be happy to never drink hard liquor or beer again. But sangria, I could (and sometimes do) drink like soda. The tortilla espanola looks interesting, kind of like a frittata (which are awesome also!).
