I looked through my recipes for awhile, wanting to do something a little different with the cauliflower I had picked up on sale... I ended up with a take on Rachel Ray's Pasta w/Cauliflower Sauce. For two servings, I used 4oz penne (Barilla Plus), a little over half of a small head of cauliflower, water instead of stock, half of yellow onion instead of red, fresh thyme instead of rosemary, and goat cheese instead of romano. Apparently I didn't look too closely at the recipe when I decided to go for it! haha. Anyways, I was actually quite surprised at how tasty this turned out, despite the bland colors. Purple or orange cauliflower would be quite delightful in this!

Mmm!!!
Sounds like a perfect pair :o)
Cauliflower is def. one of the most under-appreciated veggies.
Now I am craving cauliflower.
This look so yummy!

yummy~~~~ I want a plate of that right now :D
No way! I just made the Real Simple's version tonight! I love your idea of goat cheese :)
Looks so great! I love cauliflower (and pretty much every other veggie) mixed in with pasta!Have a great weekend
yum, that pasta looks good!! excellent substitution choices :-)
I just got a big, beautiful cauliflower in my organic box today--must try this!
I got cauliflower too, but I think I am going to try to roast it. Fingers crossed it turns out!
surprise me yet again. Califlower is another one of THOSE vegetables in the same category for me as brussel sprouts but you always make them look so good!
Rachael's recipes are great for sparking ideas, even if you don't end up following them at all!
Now this is a great way to eat califlower!!! I love this, and I bet I could get my hubby to eat this. It really is the perfect pair.
I didn't always like cauliflower, but now I'm a big fan, especially when it's roasted. This looks delicious!
Hehe, I actually like your substitutions! I would have done the same (minus the onion!)
Sounds delish. I always do the same thing with recipes - scan it, think I have all the ingredients and then realize I have to make substitutions throughout the whole thing. Glad it turned out so well, although it would look amazing in purple!
What a fantastic combination!! It looks wonderful, and I so adore cauliflower. Always looking for new ways to use it!
Tasty! It looks so cheesy and creamy in that photo. I really want to try that recipe.
I've overlooked cauliflower for far too long. I think I had it two times in a row where it was overcooked or dry or something, I gotta try it in other things, this looks like a great place to start!
yum!!!!!!!!!!!!!!
This definitely looks great!
And, just saw your post about the cookies for Meghann's Bake sale! They look great. Hope someone scoops 'em up for loads of cash!
Nice substitutions - goats cheese and cauliflower sound like a good mix!
