Cauliflower Pasta

I looked through my recipes for awhile, wanting to do something a little different with the cauliflower I had picked up on sale... I ended up with a take on Rachel Ray's Pasta w/Cauliflower Sauce. For two servings, I used 4oz penne (Barilla Plus), a little over half of a small head of cauliflower, water instead of stock, half of yellow onion instead of red, fresh thyme instead of rosemary, and goat cheese instead of romano. Apparently I didn't look too closely at the recipe when I decided to go for it! haha. Anyways, I was actually quite surprised at how tasty this turned out, despite the bland colors. Purple or orange cauliflower would be quite delightful in this!

I got cauliflower too, but I think I am going to try to roast it. Fingers crossed it turns out!

surprise me yet again. Califlower is another one of THOSE vegetables in the same category for me as brussel sprouts but you always make them look so good!

Sounds delish. I always do the same thing with recipes - scan it, think I have all the ingredients and then realize I have to make substitutions throughout the whole thing. Glad it turned out so well, although it would look amazing in purple!

I've overlooked cauliflower for far too long. I think I had it two times in a row where it was overcooked or dry or something, I gotta try it in other things, this looks like a great place to start!
