In celebration of the fourth of July, I bring you the latest adventure with my... "grill".
Back in Philly I was lucky enough to have an apartment with a small backyard. Not long after I moved in, I got an early birthday present--a grill! It didn't stand the test of time, but it got plenty of use :) Now I am sans backyard and relegated to a grill pan. It's worked out well, so I can't complain too much.
Until I tried to make kabobs (kebabs?). In rearranging my freezer, I found the last small piece of pork tenderloin I had bought awhile back. I did a simple marinade (juice and zest of 1 lime and a dash of soy sauce and honey) while I chopped the veggies (an orange pepper and vidalia onion). I also decided to defrost some frozen mango chunks to string along.
Then I went to put these lovlies on my grill pan. My skewers were long enough that they sat on the edge of the pan... but my meat didn't touch. Oops, guess I need larger chunks! My kabobs quickly became a grilled stir-fry, as I wasn't really interested in tempting my fate with uncooked pork. Served on a bed of leftover rice, this became one delicious meal :) I didn't really have to season much, as the grilling brought out great flavors in the onions and mango that paired well with the lime-flavored pork. Easily adaptable to whatever's in your kitchen or what you're craving, get grilling! (or grill-frying...)

We're pretty lucky at my building that we have some communal grills. I actually don't know how to grill though, embarassing as it is. My boyfriend and I tried a couple of times but we always did something wrong.
As much as I hate the cleanup, a George Foreman comes in handy in these situations. Example of my 4 July dinner:
Me: Should we fire up the grill... (Asked in more of a "I would rather not" tone.)
Bro: Just use the George Foreman.
Me: Oh. True story. It's just...
Bro: *Stares*
Me: Yeah, let's use the George Foreman. *Sigh*

I always think kabobs are a great idea until I try making them. I have trouble cooking the meat through too, without burning my veggies!

Grilled pans can be tricky but it looks like your meal turned out excellent anyway! The combo of pork and mango sounds delicious!

I wish I had a grill too. I did find a recipe online for oven baked kabobs, but it's just not the same. The pork and mango combo sounds brilliant, though!

I love the simplicity of this! Especially the marinade...love the sweet and salty combination. I wish I had a grill pan. I really like the George Foreman but it's only good for so many things.
I DID try the vanilla almond butter. I also have the white chocolate one that I haven't opened yet. Soon...

mmmmmmmmmm We've been without a grill for a while now and I cannot wait to get a new one :( Its just not summer without some form of a grill (even if its a grill pan!!)
I also learned about grilling kebabs on a grill pan the hard way... oh well:). This combo sounds yummy!
